Is Coconut Kefir The New Superfood?

It will take anywhere between 4-24 hours to strain enough whey to have thick, creamy yogurt consistency (you can actually continue straining to make a fresh kefir cheese, although if you are going to attempt this, it's better to strain at room temperature).
This culture is actually very beneficial for people who are sensitive to traditional fermented foods and for those who suffer from conditions such as histamine intolerance, SIBO, high inflammation, autoimmune conditions, food sensitivities, autism, ADHD and PANDAS.
In addition to bacteria, kefir often contains strains of yeast that can metabolize lactose, such as Kluyveromyces marxianus , Kluyveromyces lactis , and Saccharomyces fragilis , as well as strains of yeast that do not metabolize lactose, including Saccharomyces cerevisiae , Torulaspora delbrueckii , and Kazachstania unispora 11 The nutritional significance of these strains is unknown.

These "grains" are a mixture of yeast and bacteria built-up around the remnants of sugar, protein, and fat of what was formally cereal grain. After 12 hours, check the coconut kefir every few hours so you can remove the kefir grains as soon as it reaches the desired consistency.
6. Drain the coconut milk from the grains using a fine mesh, plastic strainer. It may take several weeks before the milk kefir grains regain their full strength and reproduce again. You can successfully make kefir with 2% and reduced fat milk, but if you notice that your grains are behaving sluggishly or taking longer and longer to ferment the milk, pop them back in a jar of whole milk to refresh them.
